How do chinese restaurants make their fried chicken wings?

i'm talking about like your local delivery resteraunt the chicken wings from the one near me are the best wings in the world, but also when i see them bringing it out to fry it in the oil its like white and stuff and it looks weird and when it comes out it looks golden and crispy, also where do they get their food supplies from, and is all of it pre salted?
